Spicy Mango Shrimp

Spicy Mango Shrimp

2tablespoons vegetable oil

1pound fresh shrimp, peeled and deveined

1 medium onion, diced

4 teaspoons Patak’s Mild Curry Paste

6 tablespoons water

1/2cup fresh chopped tomatoes

1 tablespoon Patak’s Hot Mango Chutney

1 tablespoon fresh chopped cilantro

Hot, cooked rice

1. In large skillet, over medium heat, heat oil. 2. Add shrimp and cook until lightly browned about 1 minute. Re-move shrimp from skillet. 3. Add onion to skillet and sauté 2 minutes or until softened. 4. Add curry paste, water and tomatoes. 5. Returnshrimp to pan. Cover and simmer for about 5 minutes or until shrimp is cooked through. 6. Stir in chutney and garnish with fresh chopped cilantro.

If desired, serve over hot rice.

Serves 4.

Preparation Time: 5 minutes

Cooking Time: 10 minutes

VARIATION:

Substitute chicken or fish for shrimp.
