It’s that time of year again! The holidays from Thanksgiving to New Year’s are often a mad rush, with little or no time to prepare a healthy, satisfying and tasty meal for your family. An easy way to excite your family about the "between" holiday meals is to focus on the ease and versatility of your favorite dish. Whether you’re look-ing for a new family favorite or trying to liven up a standard dish, you can easily add variety and extra flavor to your meal.

Zesty Chicken With Garlic and Butter Rice

4 servings

Preparation Time: 5 minutes plus marinating time

Cook Time: 15 minutes

1 package dry onion soup mix

3/4 cup vegetable or olive oil plus 1 tablespoon, divided

1/4 cup red wine vinegar

4 boneless, skinless chicken breast halves

1 package Uncle Ben’s Flavorful Brand Garlic & Butter Rice

4 slices Swiss cheese

Combine soup mix, 3/4 cup oil and vinegar in plastic zipper-lock bag for marinade. Pierce chicken breast with fork several times and place in bag to marinate. Place in refrigerator 30 minutes or overnight. Prepare rice according to package directions. Heat 1 table spoon oil in sauté pan over medium high heat and cook chicken on each side 4 minutes. Place slice of cheese on each chicken breast and serve with rice.

3/4 cup vegetable or olive oil plus 1 tablespoon, divided

1/4 cup red wine vinegar

4 boneless, skinless chicken breast halves

1 package Uncle Ben’s Flavorful Brand Parmesan & Butter Rice

1/2 cup shredded Parmesan cheese

Combine salad dressing mix, 3/4 cup oil and vinegar in plastic zipper-lock bag for marinade. Pierce chicken breast with fork several times and place in bag to marinate. Place in refrigerator 30 minutes or overnight. Prepare rice according to package directions. Heat 1 tablespoon oil in sauté pan over me-dium high heat and cook chicken on each side 4 minutes. Place shredded Parme-san cheese on each chicken breast and serve with rice.

Tangy Citrus Chicken With Chicken and Herb Rice

Preparation Time: 5 minutes plus marinating time

Cook Time: 15 minutes

1/2 cup orange juice

1/4 cup lime juice

1/4 cup vegetable oil plus 1 tablespoon, divided

1 teaspoon cracked pepper

1/2 teaspoon hot sauce

4 boneless, skinless chicken breast halves

1 package Uncle Ben’s Flavorful Brand Chicken & Herb Rice

1/2 cup crumbled Feta cheese (optional)

Green and red pepper slices (optional)

Combine orange and lime juice, 1/4 cup oil, pepper and hot sauce in plastic zipper-lock bag for marinade. Pierce chicken breast with fork several times and place in bag to marinate. Place in refrigerator 30 minutes or overnight. Prepare rice according to package directions. Heat 1 tablespoon oil in sauté pan over medium high heat and cook chicken on each side 4 minutes. Place crumbled Feta cheese or pepper slices on each chicken breast and serve with rice.

Tips for Preparing a Meal Infused With Flavor:

1. Make a marinade using common, readily available ingredients (pick your favorite oil, vinegar and seasoning packet, such as those featured in these recipes). This can be done the night before and stored in the refrigerator or even 20 minutes before cooking the chicken.

2. Marinate chicken 20 minutes or up to 24 hours.

3. Prepare your favorite complement-ary Uncle Ben’s Flavorful Brand Rice.

4. Sauté, bake or grill chicken.

5. Top chicken with your favorite cheese, nuts or other garnish — be creative! — and serve with rice.

Start-to-finish time will be 20 minutes excluding marinating time.
