The "IN" Sides
One Cool Bean Salad 1 clove garlic Salt and pepper to taste 4 tablespoons lemon juice 1 can (28 ounces) Allens Cut 1 small onion, finely chopped 2 tablespoons finely chopped 4 tablespoons virgin olive oil 1/2 cup halved cherry 1. Mash garlic and salt. 2. Add lemon juice and mix well. 3. Add remaining ingredients, except tomatoes, and toss. 4. Refrigerate at least one hour before serving. 5. Garnish with cherry tomatoes. Tasty tip: For more tartness use an additional 2 tablespoons lemon juice and 2 tablespoons olive oil. Servings: 4
