One Cool Bean Salad

1 clove garlic

Salt and pepper to taste

4 tablespoons lemon juice

1 can (28 ounces) Allens Cut
Italian Green Beans,
drained

1 small onion, finely chopped

2 tablespoons finely chopped
fresh parsley

4 tablespoons virgin olive oil

1/2 cup halved cherry
tomatoes

1. Mash garlic and salt. 2. Add lemon juice and mix well. 3. Add remaining ingredients, except tomatoes, and toss. 4. Refrigerate at least one hour before serving. 5. Garnish with cherry tomatoes.

Tasty tip: For more tartness use an additional 2 tablespoons lemon juice and 2 tablespoons olive oil.
